Tasting notes
Deliciously dark cherries, chocolate, fig, and mushroom on the nose flow into a blackberry jam palate with added notes of violet and espresso beans. Coarse tannins are balanced by refreshing acidity.
Production notes
Harvested on August 27th at 25.45 brix, de-stemmed and hand sorted. Cold soaked for 2 days. Once fermentation had begun, daily pumpovers were performed until dry. 16 days on its skins.
