Tasting notes
Opens with wild cherry, blackcurrant, violets, and sage, underscored by cedar cigar box, and cocoa nibs. Structured and layered, revealing flavors of dried herbs, and leather with a juicy burst of boysenberry and cherry before a lingering, savory finish. A wine of both elegance and intensity, perfect for aging or immediate enjoyment.
Production notes
Cabernet Franc and Petit Verdot were co-fermented. Before fermentation, 5% of the juice saignéed to concentrate color and tannin profile. During fermentation, pumpovers were performed twice daily with délestage performed every 3rd day. The lot remained on its skins for 17 days
