Tasting notes
The nose shows cocoa powder, blueberries, boysenberry, Santa Rosa plums, and a hint of violet. On the palate, toasted oak and bright berry flavors mingle with ripe plum and a touch of minerality, all lifted by refreshing acidity, leading to a long, balanced finish.
Production notes
The lots were destemmed and cold-soaked for 3–5 days, with 5% saignéed to boost color and tannins. During fermentation, pumpovers occurred twice daily and délestage every third day. Skins were retained for 14–28 days.
