This single-vineyard Sauvignon Blanc is expressive and aromatic, with vibrant notes of guava and fresh grapefruit. Lively acidity keeps it crisp and refreshing, with a clean, zesty finish that highlights its tropical character.
Picked at 1 a.m. to preserve acidity and freshness, two clones were whole-cluster pressed separately. After a brief non-Saccharomyces fermentation during cold settling to enhance aromatics, the lots were racked and cold-fermented for 35 days.
